The entire textbook will be covered during the one day of course instruction. The course is a mixture of lectures, videos, and discussions that moves at a fast pace. This is a comprehensive course that covers many areas of food safety including food-borne illnesses, proper food handling, personal hygiene, and facility design and maintenance. It is strongly recommended that you read the textbook prior to the course. The fee for the class includes a copy of the textbook. The cost of the course is $150 per student. To register for the course, come to the Gwinnett Environmental Health office to pay for the course and pick up the textbook. The class size is limited to 15 students. and students may leave once they have completed the exam. On the second day, the class begins at 8:30 a.m. On the first day, the class runs from 8:30 a.m. The course information is taught on the first day and a review and the exam are given on the second day. The four programs that currently meet this requirement are Learn2Serve (, Inc.), ServSafe (National Restaurant Association), the National Restaurant and Food Safety Professionals course, and the Prometric, Inc course.

The current Georgia Food Code requires that each facility have at least one staff member that has managerial or supervisory responsibilities to hold a nationally-recognized food safety manager certification.
